The trick to being a world champion pizza chef is surely to know a few secrets for that winning edge in what must be a fiercely competitive field. (“Parra bros claim slice of history”, DT, 12/6). News that North Parramatta is again in the world headlights for culinary excellence is no surprise at all to those of us regularly enjoying the ambience of “eat street” and familiar with Fratelli Pulcinella on Church Street. Throwing in a few red herrings about olive oil, dough preparation, fresh ingredients and a two-minute cooking time are surely a diversion to confuse the competition for next time. At the end of the day, the winning strategy was surely all in the flick of the wrist as the thinly spread dough defied gravity, rolling out for its perfectly confected topping.
